Do you love granola but not love all the calories and sugar it contains? If you’re anything like me, one of my favorite snacks is yogurt and granola, granola in a mug with milk, granola on my ice cream or granola out of the bag just as it is! But I find myself avoiding it because one look at the nutrition facts is enough to turn me in the other direction. Sometimes the nutrition facts look decent, but don’t let that fool you. Often times the serving size is smaller than my pinkie toe. I want lots of granola. Not pinkie toe granola.Â
This recipe for granola is here to save the day. I’ve started calling it “Good Guy Granola” because this granola is your friend. It’s delicious, crunchy and packed with nutrition. My favorite way is to eat it out of a mug with almond milk like cereal but its great with Greek yogurt or even as a to-go snack in a ziplock bag. Try it out and cherish the joy of eating granola without giving sugar and calories an invitation to the party.
Good Guy Granola:
-1 cup rolled oats
-1/2 cup quinoa (uncooked)
-1/2 cup almonds, coarsely chopped or sliced (I even threw some pecans in)
1/4 cup chia seeds
1/2 Tbs. stevia
1 tsp. cinnamon
1/8 tsp. salt (I used sea salt)
3Tbs. Coconut oil
3Tbs. maple syrup
1 tsp. vanilla
1/4 cup coconut shreds
Directions: Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a large bowl mix together, oats, quinoa, chia seeds, almonds, stevia, cinnamon and salt. In a smaller bowl combine coconut oil, syrup and vanilla in a bowl and melt in the microwave. Pour coconut mixture over the oat mixture and stir until all the grains are covered. Spread evenly on the baking sheet and bake for 30 minutes. Sprinkle coconut shreds on top of the granola when it comes out of the oven and let it cool completely. Store in an air tight container or eat it right away! #dostuff #behealthy
