Hey scouts! Happy Sunday! I woke up to the roar of a ferocious wind today which is very unusual for SoCal, but reminded me of this encouraging truth. “The wind blows wherever it pleases. You hear its sound, but you cannot tell where it comes from or where it is going. So it is with everyone born of the Spirit.” John 3:8
God’s presence is all around every single day whether we realize it or not. It’s remarkable how different the quality of our days can be when we take time to seek God wherever we are. Be more aware of Him today! He has lots to show you!
I know I told you I would give you the recipe for Pumpkin Spice Overnight Oats, but by the time I remembered I would do that, I already ate them. haha! I guess that means it’s worth sharing. But I have left over pumpkin so I will make it again. Today I’m going to show you how I made Ooey Gooey Apple Crisp Bars.
These bars proclaim FALL and fill your mouth with spicy, oaty, (is that a word?) caramely goodness. And you don’t even need eggs! I was making this recipe in the wonderful Morlan dorm kitchen and when I got there, there were no bowls. So I improvised and used a spaghetti pot. Please forgive me.
In a large bowl, or spaghetti pot, mix together two cups of oats, 1 cup flour, baking soda, cinnamon and nutmeg. I even threw a little pumpkin pie spice in to bring out all the flavor.
In a separate mixing bowl, cream together the butter and sugar until light and fluffy. Gradually add in flour mixture until combined.
Save 1 cup of oat mixture and press the rest into the bottom of a 9×13 pan. Bake on 350 for about 10 minutes.
Meanwhile, melt one 11oz package of KRAFT Caramels in the microwave and mix with milk until smooth. Sprinkle apples on top of crust and drizzle caramel on top of the apples. Then crumble on the remaining 1 cup of oat mixture.
Bake in the oven for about 20-25 minutes or until the top is golden brown. Cool and then eat!
