Raise your hands if you like pesto. Okay, I can’t raise mine because I have to type, but my toes are up.

I LOVE pesto, but every time I’ve tried to make it, it’s been a massive failure. So I just buy it. But today I decided to give it a go one more time and GUESS WHAT?! It worked! I’m so excited that I want to share it with you.

Put 1/2 cup Olive Oil in a Vita Mix or food processor.

Add 3 medium garlic cloves, peeled.

Dump in 2 cups of fresh basil leaves.

Add 1/2 cup grated parmesan cheese (optional)

Pour in 3 Tbs of pine nuts.

Turn the blender on and increase the speed to 7 right away. Blend until pesto is smooth and add some sea salt and pepper to taste.

Enjoy! Pesto is great on chicken, quinoa, bread, pasta or by the spoon. 😉
