Raise your hands if you like pesto. Okay, I can’t raise mine because I have to type, but my toes are up.
I LOVE pesto, but every time I’ve tried to make it, it’s been a massive failure. So I just buy it. But today I decided to give it a go one more time and GUESS WHAT?! It worked! I’m so excited that I want to share it with you.
If you add me on snapchat: nicolerenard, you can see my story that shows step by step how I made it. It’s so easy!
Put 1/2 cup Olive Oil in a Vita Mix or food processor.
Add 3 medium garlic cloves, peeled.
Dump in 2 cups of fresh basil leaves.
Add 1/2 cup grated parmesan cheese (optional)
Pour in 3 Tbs of pine nuts.
Turn the blender on and increase the speed to 7 right away. Blend until pesto is smooth and add some sea salt and pepper to taste.
Enjoy! Pesto is great on chicken, quinoa, bread, pasta or by the spoon. 😉
Thanks for taking the time to read this blog. I’ll be posting another about some scrumptious zucchinis that we had for dinner tonight shortly after this one! Check back soon for some more yummy summer, healthy inspired recipes!
Love always,
