
Cauliflower is in my top 3 favorite vegetables. I know I’m weird and cauliflower doesn’t even come close to most people’s top vegetables but I LOVE IT. It’s the perfect side to throw in with fish, chicken, or even steak!
So if you absolutely hate cauliflower and can’t stand to eat it, maybe I can persuade you with these 3 health benefits:
- One serving of cauliflower has 77% of the daily recommended intake of Vitamin C.
- Cauliflower helps your body’s ability to detoxify and is full of fiber so it aids in digestion.
- Cauliflower is a good source of choline, a B vitamin known for its role in brain development.
Still not convinced? Well lucky for you there are about a million things you can do with cauliflower that make it so delicious you won’t even know it’s cauliflower. I’m going to give you three ideas that I find SUPER yummy.
They are:
- Cauliflower Tots {Made a video for this one, check it out HERE}
- Cauliflower Rice
- Roasted Cauliflower Steaks
Cauliflower Tater Tots
Ingredients
- 2 cups cauliflower florets
- 1 large egg
- ¼ cup red bell pepper, chopped (optional)
- ½ cup cheddar cheese, shredded
- ¼ cup Parmesan cheese
- ¼ cup breadcrumbs
- ¼ minced cilantro or parsley (optional)
- salt and pepper to taste
Directions:Â
- Preheat oven to 375°F. Steam cauliflower in hot water for 3-5 minutes or until nice and soft, drain and chop with a knife or blend in the food processor (just a few seconds.)
- In a medium bowl, combine all of the ingredients and season with salt and pepper just how you like it.
- Spoon about 1 Tbs of mixture in your hands and roll into small oval shaped tots.
- Place on the cookie sheet ½ inch apart and bake for about 20 minutes, turning halfway through cooking until golden.
Cauliflower RiceÂ
This is such a great alternative to regular rice! Trader Joe’s has “Riced Cauliflower” in a bag in the veggie section that makes this recipe SO EASY!
Ingredients
- 1 Head of Cauliflower (Or bag of Trader Joe’s Riced Cauliflower)
- Olive Oil
- Garlic (minced)
- Salt & Pepper
Directions
- Chop your head of cauliflower in a food processor or with a knife until it looks like rice. (If you have Trader Joe’s Riced Cauliflower you can skip this step)
- Heat a skillet with 2 tsp of olive oil.
- Sauté garlic in oil for about 2 minutes.
- Add Cauliflower and sauté until cauliflower is soft. Add salt and pepper to taste.
Roasted Cauliflower Steaks
I got this recipe idea from one of my chef friends Tiffany Lewis!
Ingredients
- 1 Head of Cauliflower
- Olive Oil
- Sea Salt
- Pepper
Directions
- Preheat an oven to 400 degrees.
- Take off the stem and leaves of the cauliflower and then cut it into big thick slices as if you were cutting a loaf of bread. I would cut maybe an inch thick. The ends will kind of fall apart but you should get 2-3 nice sized “steaks”.
- Put them on a rimed cookie sheet that has a wire rack on it so the cauliflower isn’t directly touching the pan.
- Brush the tops of the cauliflower with olive oil and sprinkle with salt and pepper.
- Bake for 15-20 minutes or until the edges of the cauliflower begin to roast and cauliflower is soft.
