
My favorite part of summer is the plethora of pool parties that last until the evening with beautifully painted sunsets. The Tri-Cities (where I’m from) has arguably the best sunsets in the Pacific Northwest. Check out this picture I took before I left for work!!
I’ve been working on a couple summery recipes, that are quick, simple and easy to eat and after visiting Columbia Valley Farms I was inspired to throw their pickled asparagus into my next creation.
These little rollups are so tasty and a perfect snack for you to bring to the next pool party. Â I’ve never had Nancy’s Cream Cheese until now when I decided to use it in this recipe and it’s SO delicious!! Unlike any other cream cheese I’ve ever tasted.
If you’ve noticed a theme in my recent recipes, most of them are 3-4 ingredients. Simple, or lazy? haha either way, I like to keep my recipes to as little ingredients as possible so you know exactly what you’re putting into your body. Food can be equally delicious when it’s simple… no need to make it complicated.

Pickled Asparagus Rollups
Ingredients:Â
- Foster’s Pickled Asparagus
- 1 pack of ham steaks
- Nancy’s Cream Cheese (or any kind of cream cheese)
Directions:
- Spread cream cheese evenly on ham steaks.
- Place 1 asparagus on the end of the ham steak and roll it up!
- Place on a platter and enjoy!
