PSA THERE ARE 133 DAYS UNTIL CHRISTMAS!!! Y’all I am JAZZED about the holiday’s and it’s not even fall. Someone hold me back. But who knows that after the year we’ve had, we all need something to celebrate and look forward to?!

So I decided in the spirit of all things FUN that every Friday I’m going to share a new holiday recipe with you as an official segment of “Nicole’s Holiday Countdown” Did I just make that up? Yep. Am I going to run with it and make it a thing? Absolutely.
Nothing screams Christmas to me more than fudge. Now, Christmas is known for plenty of desserts, all of which I’m a BIG fan of but Thanksgiving has pie, and plenty of holidays have cookies. Fudge reigns supreme around Christmas which is why I’m kicking off the holiday countdown with my favorite Chocolate Peanut Butter Fudge recipe.

Chocolate Peanut Butter Fudge

Ingredients

Bottom Layer:

  • 1¼ cups creamy peanut butter
  • 1¼ cups butter
  • 1½ tsp. vanilla
  • 4 cups of powdered sugar

Top Layer:

  • 2 cups semi-sweet chocolate chips (about 1 bag) (I use Ghirardelli…Always)
  • 1 cup sweetened condensed milk
  • 2½ Tbs. butter

Directions

  1. Place peanut butter and butter into a medium microwave safe bowl. Microwave for 60 seconds. Stir. Microwave an additional 30 seconds. Stir until smooth.
  2. Stir in vanilla extract.
  3. Gradually whisk in powdered sugar.
  4. Pour into a lightly greased 9-inch square pan.
  5. In another medium microwave-safe bowl, combine chocolate chips, sweetened condensed milk, and 2½ tablespoons butter.
  6. Microwave for 45 seconds. Stir. Microwave another 30 seconds. Stir until smooth.
  7. Pour on top of peanut butter layer using a rubber spatula to smooth it out. Refrigerate for at least 2 hours before cutting into squares.
  8. INHALE
