HAPPY FALL. I’m so excited to say that. I have been gearing up for this season, prepping so many yummy things for you these next few months and I’m so excited to start sharing. We are going to kick off the season with 4 easy, healthy fall snacks.

Each of these are SO easy to make. They are the perfect thing for after school, in the morning or on the go.

Pumpkin Spice Energy Bites

Ingredients:

  • 1 1/4 cups rolled oats
  • 1/4 cup ground flax seed
  • 1 Tbs chia seeds
  • 1/2 cup canned pumpkin puree
  • 1/3 cup maple syrup
  • 1/4 cup almond butter
  • 1/4 cup dried cranberries
  • 1 tsp vanilla
  • 1 tsp pumpkin pie spice (or cinnamon)
  • pinch of salt

Directions: 

  1. Place all of the ingredients into a large mixing bowl.
  2. Stir until combined and refrigerate for about 30 minutes to firm up
  3. Roll into balls about 2 Tbs sized.
  4. ENJOY!

Pumpkin Oat Cookies

Ingredients:

  • 2 1/2 cups rolled oats
  • 1 cup pumpkin puree
  • 2-3 Tbs Maple syrup
  • 1 tsp pumpkin pie spice (or cinnamon)
  • 1/2 cup chocolate chips

Directions:

  1. Mix all ingredients in a large mixing bowl.
  2. Scoop out 1/4 cup of the dough and form into balls.
  3. Place on a baking sheet and bake at 350 for 8-10 minutes
  4. ENJOY

Apple Chips

Ingredients:

  • 2 large crisp apples
  • cinnamon

Directions:

  1. Preheat oven to 200 degrees
  2. Slice apples horizontally into 1/8 thick slices. be careful on this to not cut your fingers!
  3. place on a baking sheet with parchment paper in a single layer.
  4. Sprinkle with cinnamon
  5. Bake for about 2-2.5 hours until desired crispiness is formed. (once you take apples out of the oven, let them cool for 2-3 minutes to test crunchiness. They will get more crunchy as they cool)
  6. ENJOY

Pumpkin Dip

Ingredients:

  • 15oz can pumpkin puree
  • 3.4oz instant vanilla pudding mix
  • 4oz whipped cream cheese (optional)
  • pumpkin pie spice (or cinnamon)
  • 8oz Cool Whip

Directions:

  1. Mix together all ingredients except the cool whip in a large mixing bowl until combined.
  2. Fold in the Cool Whip and dip with vanilla wafers or cinnamon graham crackers.
  3. ENJOY
