I get so excited for breakfast during the fall because the flavors of oats, cinnamon, apple, maple and pumpkin are so cozy. Today I’m giving you 3 of my favorite go to healthy fall inspired breakfast recipes and I hope you love them as much as I do. Below you’ll find Pumpkin Granola, Pumpkin Baked Oats and Apple Oatmeal Cups. Let me know in the comments which on you are most excited to try!
Pumpkin Granola
Ingredients:
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/2 cup pumpkin puree
- 3 cups rolled oats
- 1/2 cup unsweetened coconut chips
- 1/2 cup chopped pecans
- 1/4 cup pumpkin seeds
- 2 tsp pumpkin pie spice
- 1 tsp sea salt
- 1 tps vanilla
Directions:
- Combine coconut oil and maple syrup in a large bowl and microwave for 30-60 seconds until melted. Then add the pumpkin puree and stir to combine.
- Add oats, coconut chips, pecans, pumpkin seeds, pumpkin pie spice, vanilla and salt to the bowl. Stir until everything is coated.
- Spread mixture in an even layer on a baking sheet and bake at 325 for 35-40 minutes. Granola will get crunchier as it cools
- ENJOY
Pumpkin Baked Oats
Ingredients:
- 1/3 cup pumpkin puree
- 1/2 cup oats
- 1/3 cup almond milk (or any milk)
- 1 tsp baking powder
- 1-2 Tbs maple syrup
- handful of chocolate chips
- 1/2 tsp vanilla
- dash of cinnamon
- dash of pumpkin pie spice
Directions:
- Combine the pumpkin, milk, maple syrup, and vanilla until smooth.
- Add in the oats and baking powder and combine and then add the cinnamon and pumpkin pie spice.
- Stir in the chocolate chips.
- Pour the mixture into a small oven safe dish (I used a ramekin)
- Bake at 400 degrees for 20 minutes.
- Let cool and ENJOY!
Cinnamon Apple Oatmeal Cups
Ingredients:
- 3 cups rolled oats
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup packed light brown sugar
- 1/2 cup plain greek yogurt
- 2 tsp vanilla
- 1 cup milk
- 1/4 cup coconut oil
- 1 1/2 cups finely chopped apple (I used honey crisp)
- 1/4 cup chopped walnuts
Directions:
- Preheat the oven to 350 degrees.
- In a medium mixing bowl, stir together oats, cinnamon, nutmeg, baking powder and salt.
- In a large mixing bowl lightly whisk two eggs together and then add brown sugar.
- Stir in the greek yogurt, vanilla, milk and oil.
- Add your oat mixture to the egg mixture and stir to combine.
- Add apple and walnuts and stir to combine.
- Scoop out mix into a muffin tin and pat down with the back of a spoon
- Bake for 30 minutes.
- Using a knife, pop the oatmeal cups out and ENJOY!
