As much as I love having a morning routine, sometimes breakfast can just feel blah and I can get bored of making the same thing every day. Don’t get me wrong, if it’s a busy morning, my go to’s are simple and easy to know exactly what I’m eating but if I ever have a little more time and want to shake it up a little bit, this is my new favorite.
These apple protein pancakes are such a fun twist on incorporating fruit into breakfast and using pancake batter in a new way. Cutting your apple length wise and taking out the core makes them the perfect dippable slice into your favorite pancake batter leaving you with a sweet apple stuffed pancake once you fry them. I love using Kodiak Cakes Protein Pancake Mix to get a little extra protein in this dish but feel free to use what ever pancake batter you want!

Apple Protein Pancakes
Ingredients:
- 1 honey crisp apple
- Cinnamon
- 1 serving of pancake batter (I used @kodiakcakes for extra protein)
- Almond or peanut butter
Instructions:
- Slice apple horizontally across the core in 1/2 inch slices.
- Using a small circle cookie cutter or a straw, punch out the cores, so you have thick apple donut slices.
- Sprinkle each apple slice with cinnamon.
- Make the pancake batter according to package and dip each apple slice into the batter coating both sides.
- Fry in a medium high skillet and flip when golden brown.
- Drizzle with almond or peanut butter and enjoy!
