When I was a kid I loved when my dad made me cinnamon sugar toast for breakfast but other than that I have to be honest, I’ve never been much of a toast fan. Which is what inspired me to set out on a new toast series to see if I could find mroe yummy ways to top and prepare toast making it a more enjoyable experience.

The first one I tried was this lemon blueberry ricotta toast and it did not disappoint.

This recipe combines creamy ricotta cheese, zesty lemon, and juicy blueberries atop a perfectly toasted slice of bread. It’s a delightful blend of sweet and tangy, perfect for a morning pick-me-up or an afternoon snack. Easy to prepare and absolutely delectable, this toast is sure to become a favorite in your recipe repertoire. Try it and let me know what you think!

Lemon Blueberry Ricotta Toast

Ingredients:

  • 1 Thick Slice of Sourdough Bread
  • Olive Oil
  • 3/4 cup Blueberries
  • Drizzle of honey
  • Juice of 1/2 a Lemon
  • 1/4 cup Ricotta Cheese

Directions:

  1. Add blueberries, honey and lemon juice to a sauce pan on medium heat and stir until a thick jam like consistency forms.
  2. Drizzle both sides of your bread with olive oil then toast each side on a skillet on medium heat.
  3. Spread an even layer of ricotta cheese on toast.
  4. Add your blueberry compote on top of the ricotta cheese.
  5. Top it off with lemon zest and enjoy!
