When I was a kid I loved when my dad made me cinnamon sugar toast for breakfast but other than that I have to be honest, I’ve never been much of a toast fan. Which is what inspired me to set out on a new toast series to see if I could find mroe yummy ways to top and prepare toast making it a more enjoyable experience.
The first one I tried was this lemon blueberry ricotta toast and it did not disappoint.
This recipe combines creamy ricotta cheese, zesty lemon, and juicy blueberries atop a perfectly toasted slice of bread. It’s a delightful blend of sweet and tangy, perfect for a morning pick-me-up or an afternoon snack. Lemon Blueberry Ricotta Toast
Ingredients:
- 1 Thick Slice of Sourdough Bread
- Olive Oil
- 3/4 cup Blueberries
- Drizzle of honey
- Juice of 1/2 a Lemon
- 1/4 cup Ricotta Cheese
Directions:
- Add blueberries, honey and lemon juice to a sauce pan on medium heat and stir until a thick jam like consistency forms.
- Drizzle both sides of your bread with olive oil then toast each side on a skillet on medium heat.
- Spread an even layer of ricotta cheese on toast.
- Add your blueberry compote on top of the ricotta cheese.
- Top it off with lemon zest and enjoy!
