I might be saying something controversial but I like cottage cheese. I always have. Call me crazy but the texture doesn’t bother me and I can eat it pretty much any time of day. (except for a late night snack, I’m not that crazy)

So if you’re like me and also riding the cottage cheese train then this recipe is for you. And if you’re not, humor me and still try this recipe because with the way I have you preparing it, you really can’t taste the cottage cheese or texture at all! It just tastes like creamy goodness bursting with yummy flavors coming from the tomatoes and basil.

Each bite delivers a perfect balance of protein and freshness, making it an ideal choice for a satisfying and energizing start to your day or a delightful mid-day treat. I hope you enjoy!

Tomato Basil Protein Toast

Ingredients:

  • 1 Thick Slice of Sourdough Bread
  • Olive oil
  • 1/3 cup Cottage Cheese
  • 1 Heirloom Tomato
  • 2 Basil Leaves
  • Salt and Pepper

Directions:

  1. Drizzle both sides of your toast with olive oil and toast on a medium high skillet until both sides are golden brown.
  2. Spread on a layer of cottage cheese and top with salt and pepper
  3. Cut thick slices of your heirloom tomato and layer on top of the cottage cheese. Salt as desired.
  4. Lightly roll up the basil leaves and slice into thin pieces and top your tomatoes.
  5. Enjoy!
