When I lived in LA I was less than 3 miles from a Sweetgreen which, if you don’t know what that is, is the yummiest lunch spot with customizable hearty salads and nutrient dense grain bowls. I LOVED it.
Every fall they had a seasonal harvest salad bowl that I would look forward to every year and try to order as many times as I could before they took it away.
I’ve been CRAVING that bowl lately so I decided to make my own little rendition of it and share it with you. It’s the perfect salad for autumn and comes together in minutes.

Autumn Kale Crunch Salad
Ingredients:
- 6 cups kale, chopped
- 1 honey crisp apple, chopped
- ½ cup pecans, chopped
- ½ cup dried cranberries
- ¼ cup pumpkin seeds
- ⅓ cup goat cheese crumbles
- 1 chicken breast, cooked how you like it and chopped into bite sized pieces
For the dressing:
- ⅓ cup olive oil
- 2 Tbs champagne vinegar
- 2 tsp dijon mustard
- 1-2 garlic cloves (depending on preference)
- 1.5 Tbs honey
- salt and pepper
Optional toppings if you’re feeling funky:
- roasted sweet potato
- quinoa
Directions:
- Chop kale, apple pecans and chicken breast.
- In a big bowl combine all ingredients.
- For the dressing, using a hand blender or in a personal sized blender, combine all ingredients and blend until homogenized and smooth.
- Pour dressing over salad and toss to combine. (I find it so easy to use a bowl with a lid and just shake everything up!)
- Portion out onto plates or eat straight from the bowl and enjoy!
