The inspiration for this recipe came from a common problem in our house: snack fatigue. My husband loves to snack, but he often gets bored of the same flavors and ends up leaving half-eaten bags of chips behind. Rather than let them go to waste, I decided to put those leftover chips to good use. What better way to elevate an already amazing snack like chocolate chip cookies than by adding the salty, crispy goodness of potato chips?

Not only do these cookies help reduce waste, but they also deliver a unique flavor and texture that make them stand out from the usual cookie lineup. Potato Chip Cookies

Ingredients:

  • 1 cup butter
  • 1 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg 
  • 1 egg yolk
  • 1 Tbs vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 2 cups flour
  • 3/4 cup chocolate chips
  • 3/4 cup crushed potato chips

Directions:

  1. Preheat oven to 350° F.
  2. In a large bowl or a bowl of a stand mixer, cream together, butter, brown sugar, and white sugar until light and fluffy.
  3. Add egg and egg yolk and vanilla and mix until combined.
  4. In a separate large bowl whisk together, baking powder, baking soda, salt, and flour.
  5. Slowly, add dry ingredients into wet ingredients and mix until just combined.
  6. Add chocolate chips and potato chips and fold in with a spatula.
  7. Scoop into 2 Tbs size balls, and place evenly on a baking sheet.
  8. Bake for 8 to 10 minutes when the edges are brown, but the middles are still gooey.
  9. Let cool completely before removing from pan. Cookies will set and give you that nice gooey center with crunchy edges!
  10. Enjoy!!
