I first made these on a day when I was craving something sweet but didn’t want to turn on the oven. (which is a blessing in today’s heat!!) The combination of creamy peanut butter, warm cinnamon, and rich chocolate is irresistible — and the best part is, you can store them in the fridge or freezer for quick grab-and-go treats. Healthy No Bake Peanut Butter Cups
Ingredients:
- 1 cup rolled oats
- 1 cup creamy peanut butter
- 1/4 cup honey
- 1/2 tsp cinnamon
- Pinch of salt
- 1 cup chopped dark chocolate
- 1 Tbs coconut oil
- Sea salt and/or chopped peanuts for topping
Directions:
- In a medium bowl, combine oats, peanut butter, honey, cinnamon and salt and mix until combined.
- Scoop out into a muffin tin about half way full and press down with a spoon.
- Melt chocolate chips and coconut oil in a bowl (a measuring cup with a spout works great for this)
- Pour chocolate on top of peanut butter mixture making a 1/2 inch layer.
- Top with sea salt or chopped peanuts.
- Refrigerate or freeze until chocolate is set.
- Remove from muffin tin and enjoy for up to 2 weeks.
- Store in an air tight container in the fridge!
