Banana Chocolate Chip Breakfast Cookies

I have always wanted dessert for breakfast and these banana chocolate chip cookies are the closest I have ever gotten to making that a reality. They taste like a cookie. They look like a cookie. And yet every single ingredient in them is something that actually nourishes you and keeps you going. Ripe bananas, oats, peanut butter, a drizzle of honey, and enough chocolate chips to make it feel like a real treat. I eat these for breakfast regularly and I am completely at peace with that decision.

The bananas are doing a lot of the heavy lifting here. Three ripe ones mashed up and mixed with an egg, applesauce, peanut butter, and a little vanilla creates a base that is naturally sweet, moist, and holds together beautifully without any flour or butter. The quick oats give them that hearty cookie texture that keeps you full way longer than a regular cookie ever would. And the cinnamon and honey add just enough warmth and sweetness that you forget for a second that these are technically a healthy breakfast option.

The chocolate chips are non negotiable. I know some people will try to swap them for raisins and I respect that but I will not be doing that in my house. The chocolate is what makes these feel like a treat worth waking up for and it is also what makes Willa eat them without any convincing. A half cup folded into the batter means you get chocolate in almost every single bite which is exactly how it should be. Twelve ingredients, one bowl, and about fifteen minutes in the oven and you have cookies for breakfast that nobody can argue with.

Make a big batch on Sunday and keep them in an airtight container all week. They are perfect for busy mornings when you need something fast, for a mid morning snack, for an after school treat, or honestly just for any moment when you want a cookie but also want to feel good about what you’re eating. The best of both worlds in one little oat cookie. Make them this weekend.

Why You’ll Love This Recipe:

  • These taste like dessert for breakfast and are actually good for you at the same time which is genuinely the highest achievement any breakfast recipe can accomplish
  • One bowl and fifteen minutes in the oven is the entire commitment and the result is a batch of cookies that keeps in an airtight container all week for the easiest grab and go breakfast or snack
  • Ripe bananas and applesauce do all the sweetening with zero refined sugar anywhere in the recipe so these are completely appropriate for toddlers, kids, and adults who want something nourishing in cookie form
  • The peanut butter adds healthy fats and protein that make these cookies genuinely filling and satisfying in a way that most breakfast options simply are not

Key Ingredients:

  • Ripe bananas: The riper the better here. Brown spotted bananas that are almost too ripe to eat are the sweetest and most flavorful and they mash into the smoothest most easily incorporated base. The sweetness of your bananas directly determines the sweetness of the final cookie so do not use under-ripe bananas
  • Quick oats: The base of the cookie that gives it that hearty, satisfying texture and keeps it together as it bakes. Quick oats are recommended over rolled oats here because they integrate more smoothly into the batter and create a more cohesive cookie that holds its shape
  • Peanut butter: Adds healthy fats, protein, and a rich nuttiness that pairs with the banana in one of the most classic and beloved flavor combinations. Natural peanut butter works but make sure it is well stirred so the oil is fully incorporated before measuring
  • Applesauce: Works alongside the mashed banana as a natural sweetener and binder that keeps the cookies moist and tender without any added sugar or oil. It also adds a subtle apple flavor that works beautifully in the background without being detectable
  • Chocolate chips: The one ingredient that makes these feel like a real treat rather than just a healthy breakfast option. A half cup folded in at the end means you get chocolate in almost every single bite which is exactly the way it should be
  • Cinnamon: Added to the batter for warmth and that cozy spiced flavor that makes these taste like something you genuinely look forward to eating every morning

Tips for Success:

  • Use the ripest bananas you have. The more brown spots the better because riper bananas are sweeter, more flavorful, and mash into a smoother base that incorporates more easily into the batter
  • Do not overmix the batter once everything comes together. A few passes with a spatula until just combined is all you need. Overmixing develops too much structure and results in a tougher, less tender cookie
  • Fold the chocolate chips in last with a spatula rather than stirring them in with the other ingredients so they stay whole and distribute evenly throughout the batter without sinking to the bottom
  • These cookies do not spread much in the oven so gently press each portioned mound down slightly with the back of a spoon before baking to give them a more cookie-like shape

Storage:

Store banana chocolate chip breakfast cookies in an airtight container at room temperature for up to three days or in the refrigerator for up to a week. They are best at room temperature or slightly warm so if you store them in the fridge let them sit out for a few minutes before eating or microwave for fifteen seconds to take the chill off. These also freeze beautifully for up to three months. Freeze in a single layer before transferring to a freezer bag. Thaw at room temperature for about twenty minutes before eating.

FAQ:

Can I use almond butter or sunflower butter instead of peanut butter?
Yes. Any nut or seed butter works in this recipe. Almond butter gives you a slightly milder, less pronounced flavor. Sunflower butter is a great nut free option for school safe cookies that tastes delicious with the banana and chocolate chip combination. Cashew butter is also incredible here and adds a slightly sweet, creamy flavor that works beautifully.

Can I add other mix-ins besides chocolate chips?
Absolutely. Dried cranberries, raisins, chopped walnuts, shredded coconut, and white chocolate chips are all delicious additions that work with the banana oat base. You can also swap the chocolate chips for cinnamon chips for a double cinnamon situation that is incredibly cozy and delicious. Keep the total mix-in amount to about half a cup so the cookies hold together properly.

Are these cookies appropriate for babies and toddlers?
These cookies are made with no refined sugar, no honey for babies under one, and no artificial ingredients which makes them a wonderful option for toddlers and young children. For babies under one year old make sure to omit any honey if you add it and check that all ingredients are age appropriate. The banana, oats, peanut butter, and applesauce combination is soft enough for little ones who are eating finger foods and the cookie size is perfect for small hands.

Ingredients

Wet ingredients

  • 3 ripe bananas
  • 1 egg
  • 1/4 cup peanut butter
  • 2 Tbs honey or maple syrup
  • 2 Tbs apple sauce
  • 1 tsp vanilla

Dry Ingredients

  • 2 cups quick oats if you don't have quick oats, you can pulse rolled oats in a blender about 5 times
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup chocolate chips

Instructions

  • Preheat your oven to 350โ„‰.
  • In a large mixing bowl mash bananas.
  • Add egg, peanut butter, honey, apple sauce and vanilla and whisk until combined.
  • Add quick oats, cinnamon, salt, baking soda, and baking powder and stir with a spatula until combined.
  • Fold in chocolate chips. Let dough rest in the fridge for 10 minutes so the oats can hydrate – this will help thicken the dough and make it more scoobable.
  • Using a large 3Tbs cookie scoop, scoop dough onto a parchment lined baking sheet. I like to add a few more chocolate chips to the top here.
  • Bake for 12-15 minutes or until the edges are set.
  • Store in an air tight container for up 5 days. Enjoy!
