Coconut Pancakes

In honor of National Pancake Day I thought I would whip up some flaps and join the party.

Pancakes remind me of when I was a kid because my dad used to make them all the time and I remember him teaching me how to flip them.

I’ve had this Food Stirs Organic Pancake Mix sitting in my pantry for forever and have been dying to try it and I finally had the perfect occasion.

Since nothing I make is ever normal, why would this be an exception?! I thought I would jazz these pancakes up a little bit and throw a little bit of tropical paradise in them. That’s right, these puppies are coconut pancakes!

I used Amy & Brian’s Coconut Water as my liquid as well as threw in some coconut yogurt and coconut cream. IT WAS A DREAM.

Coconut water helps you stay hydrated, is great for post workout and helps reduce blood pressure. YAYAY all good things.

I’m also super excited because I just got this cool new gadget to make my recipes all fancy!! What do you think?!?!? We are moving up in the world people!!

So here in it’s big debut, looking better than ever, I give you…. coconut pancakes.

Coconut Pancakes
Start your morning with a bit of tropical paradise with these delicious coconut pancakes.
Prep Time 5 minutes
Cook Time 10-15 minutes

Instructions
  1. Heat skillet or griddle to medium - high and spray with non stick spray
  2. Whisk egg, then slowly add melted butter and whisk until slightly thickened. Add in the coconut water and yogurt and whisk until smooth. Add Organic Sunday Stacks Pancake Mix and whisk until smooth.
  3. Pour just under 1/4 cup of batter onto hot griddle.
  4. Cook pancakes for about 1-2 minutes or until all the bubbles have popped and then flip with a pancake spatula.
  5. Cook for another 1 minute until the other side is done and repeat with the remaining batter.
  6. Top with Grass Fed Butter or Ghee, honey, and raspberries. Enjoy!
