I'M SO GLAD YOU'RE HERE!

HELLLLOOOOOO friends!!! My goodness it’s been awhile!!! Did you miss me?! I missed you!!!

Life has been a whirl wind recently. As soon as I got back from Italy, I hopped on a plane to Alabama to work for Senior Bowl (which was so fun btw) and then came right back and started school the next day which just so happens to be MY LAST SEMESTER OF COLLEGE!! WHAT!!! 

I know. I’m freaking out too. I haven’t done a “Feel Good Friday” in a while so I thought it was time to bring it back because I’m feeling good and I have a recipe for you that will make you feel good too!!

Just to catch you up to speed, I started my pastry chef job back up in my school’s cafeteria, so every week I get to make yummy delicacies for the students of Chapman. It’s really the best job in the world.

However, recently I’ve wanted to find healthier options for sweets, so you can still indulge, but not turn into an Oompa Loompa every time you make one of my desserts….Enter my amazing friend Alayna Flannery!!! 

Y’all this girl is the real deal. I’m going to devote a hot second on this blog to her because the world needs to know about this ray of sunshine. I met this foodie on my trip to Chicago and she has the COOLEST food instagram. Follow her. You’ll be inspired. She posted this bomb picture the other day of these Peanut Butter cookies that looked SO GOOD and then she gave the recipe and I was SO EXCITED because it’s so EASY.

Please forgive these photos, I took them with my iPhone because it was last minute and I didn’t plan on doing this as a blog so I didn’t have time to get all fancy.

So I gave it a whammy today in the caf  and added a few of my own special touches and the kids LOVED them!! What’s great about these is that you don’t necessarily have to bake them so you can roll them into balls and have little energy bites or you can pop them in the oven for a few minutes and have little cookies.

Gluten Free Peanut Butter Monster Cookies

Ingredients: 

  • 1 cup Pumpkin Puree
  • 3/4 cup Peanut Butter
  • 1 cup rolled oats
  • 2 Tbs Honey
  • Chocolate chips
  • M&M’s (optional)
  • Coconut (optional)

 

Directions: Mix all the ingredients together in a bowl and scoop into piles onto a baking sheet. Bake at 350 degrees for about 5  minutes or roll into balls for little energy bites! Enjoy!!
