There’s nothing better than a soft, freshly baked muffin steaming and oozing its warmth as you pull it apart. I’m literally drooling while typing this and am so excited to show you these muffin recipes. Today I’m giving you small batch recipes in case you want a muffin but don’t want 12 muffins, ya know?! Here are 4 of my favorite small batch muffin recipes. Enjoy!
Lemon Blueberry Muffins
Ingredients:
- 3 Tbsp sugar
- 1 egg
- 2 Tbs oil
- 1.5 Tbs milk
- splash of vanilla
- 1/3 cup flour
- 1/4 Tsp baking soda
- pinch of salt
- 2 Tbs sour cream
- 1/4 cup blueberries
- 1/2 Tbs lemon zest
- 1 Tbs lemon juice
Directions:
Preheat oven to 375 degrees. Add in your dry ingredients in a medium sized bowl, and then gently add your wet ingredients. Fold until smooth. Once batter is ready, scoop into a pre sprayed muffin tin. Bake for 10-12 min!
Coffee Cake Muffins
Ingredients:
- 1/3 cup flour
- 2 Tbs brown sugar
- 1/2 Tsp baking powder
- 1/2 Tsp cinnamon
- 1/8 Tsp baking soda
- pinch of salt
- splash of vanilla
- 1.5 Tbs oil
- 1 egg
Crumb Topping:
- 1.5 Tbs sugar
- 1.5 Tbs brown sugar
- cinnamon
- pinch of salt
- 1/8 cup melted butter
- 1/3 cup flour
Directions:
Preheat oven to 375 degrees. Add in your dry ingredients in a medium sized bowl, and then gently add your wet ingredients. Fold until smooth. Once batter is ready, scoop into a pre sprayed muffin tin. Next, for the crumb topping, mix all the ingredients in a bowl, and mix until you get a crumb consistency. Place a generous amount of crumb topping onto the muffins, and place in the oven. Bake for 10-12 min! Enjoy!
Chocolate Muffins
Ingredients:
- 1/2 cup flour
- 1/4 cup sugar
- 2 Tbs cocoa powder
- 1/4 Tsp baking soda
- pinch of salt
- 1/3 cup chocolate chips
- 1 egg
- 3 Tbs sour cream
- 2 Tbs oil
- 2 Tbs milk
- splash of vanilla
Directions:
Preheat oven to 375 degrees. Add in your dry ingredients in a medium sized bowl, and then gently add your wet ingredients. Fold until smooth. Once batter is ready, scoop into a muffin tin, and don’t forget to add liners! Bake for 10-12 min! Be prepared for it to smell like chocolaty goodness! Enjoy!
Peanut Butter Banana Muffins
Ingredients:
- 1/2 banana mashed
- 1 Tbs maple syrup
- 2 Tbs plain greek yogurt
- 1 egg
- 2 Tbs whole milk
- 2 Tbs creamy peanut butter
- Vanilla
- 1/3 cup flour
- 1/4 Tsp baking soda
- 1/4 Tsp baking powder
- pinch of salt
Directions:
Preheat oven to 375 degrees. Add in your dry ingredients in a medium sized bowl, and then gently add your wet ingredients. Fold until smooth. Once batter is ready, scoop into a pre sprayed muffin tin. Bake for 10-12 min! Enjoy!
