Healthy(er) No Bake Cookies
Ingredients:
- 1/2 cup creamy peanut butter
- 2 Tbs honey
- 2 Tbs maple syrup
- 1/4 cup coconut oil
- 2 Tbs cocoa powder
- splash of vanilla
- pinch of salt
- 1 cup rolled oats
- 1/3 cup shredded coconut
Directions:
- In a sauce pan over medium heat combine peanut butter, honey, maple syrup and coconut oil. Stir until creamy and smooth.
- Remove from heat and stir in vanilla and salt.
- Add oats and shredded coconut and stir until everything is coated.
- Line a baking sheet with wax paper and using a 2 Tbs cookie scoop or spoon, scoop out balls of dough and place them on the baking sheet.
