Peru is one of the most breathtaking places I’ve ever visited — both literally and figuratively! I had the incredible opportunity to travel there with my dad, and together we hiked to Machu Picchu. It was the hardest hike I’ve ever done, but the reward of standing at the top, surrounded by clouds and ancient stone, was absolutely worth every step. One of the other highlights of our trip was climbing to the top of Rainbow Mountain, a stunning natural wonder painted in bold stripes of red, yellow, green, and blue. The colors were so surreal, they didn’t even look real — and they inspired today’s smoothie bowl.
This papaya lime smoothie bowl is a vibrant swirl of two of Peru’s most beloved fruits: sweet, sun-ripened papaya and zesty, refreshing lime. The papaya gives the bowl a rich orange hue, while the lime creates a cool blue-green layer that mimics the colors of Rainbow Mountain. When swirled together, they’re not just beautiful — they’re a burst of tropical flavor and fresh citrus that’s energizing and nourishing.

Papaya Pop Smoothie Bowl
Ingredients:
Blue Part:
- 1/4 cup almond milk (or milk of choice)
- 2 frozen coconut cream cubes
- 1/2 frozen banana
- 2 segments frozen limes (I peel and separate mine before freezing)
- 1/4 cup frozen mango
- 1/2 tsp blue spirulina
Orange part:
- 1/4 cup almond milk (or milk of choice)
- 1/2 cup frozen papaya
- 1/2 cup frozen peaches
- 1/2 frozen banana
Toppings:
- Strawberries
- Papaya
- Dragonfruit
- Granola
Directions:
- Blend all ingredients for each color separately in a high speed blender until smooth.
- Transfer to a bowl, swirl together and top with your favorite ingredients.
