London Fogs are one of those drinks I forget about for months at a time and then I make one and immediately wonder why I ever stopped. There is something about Earl Grey steeped with vanilla and honey and topped with warm frothed milk that feels so specific and so cozy in a way that coffee just does not replicate. This vanilla honey London Fog is the drink I make on rainy afternoons, chilly fall mornings, and any moment when I want something warm and comforting that is not another espresso.

The Earl Grey is what makes a London Fog so unique and so worth making at home. It has this floral, slightly citrusy flavor from the bergamot that pairs with vanilla in the most surprisingly perfect way. Steeped for exactly three minutes so it is fragrant and flavorful without going bitter, then sweetened with honey and finished with a splash of vanilla before the milk goes in. Five ingredients, five minutes, and a drink that tastes like it came from a really thoughtful tea shop.

One of my favorite things about this recipe is that Earl Grey is naturally lower in caffeine than coffee, which makes this the perfect afternoon drink for anyone who has a self-imposed caffeine cutoff and still wants something warm and satisfying after 3pm. I am very much that person. This is the drink that gets me through the late afternoon without the 2am wide awake situation that comes from sneaking an extra espresso. Warm, cozy, and completely forgiving of whatever time of day it is.

Pair it with a shortbread cookie or a scone and you have the most perfectly civilized little moment in the middle of your day. It also works beautifully iced if you steep the tea strong, let it cool, and pour over ice with cold frothed milk on top for a warm weather London Fog that hits just as well. However you make it and whatever time of day you make it, this vanilla honey London Fog is going to become a regular in your rotation faster than you expect.

Vanilla Honey London Fog

A cozy vanilla honey London Fog made with Earl Grey tea steeped for three minutes, sweetened with honey and vanilla, and topped with warm frothed milk. Five ingredients, five minutes, and the perfect naturally lower caffeine afternoon drink that tastes like something from a thoughtful tea shop. Works hot or iced.

Ingredients
  

  • ½ cup hot water
  • 1 Earl Grey Tea Bag
  • ¼ tsp vanilla
  • 1 Tbs honey
  • ¾ cup milk

Instructions
 

  • Steep tea bag in hot water for 3 minutes.
  • Remove bag and stir in vanilla and honey.
  • Heat milk over the stove top or in microwave and froth. (Can also steam using an espresso machine if you have one)
  • Pour milk over the tea. Sprinkle with cardamom for an additional garnish.
  • Enjoy!
