Chocolate Covered Frozen Peanut Butter Banana Sandwiches

Banana coins sandwiched around creamy peanut butter, dipped in dark chocolate and coconut oil, and frozen until perfectly snappy. Ingredients
  

  • 1 banana
  • peanut butter
  • 1/3 cup dark chocolate chips or semi sweet
  • 1/2 Tbs coconut oil

Instructions
 

  • Cover a cutting board in wax paper.
  • Slice banana into 1/2″ slices.
  • Top one banana coin with peanut butter and place another coin on top of it to make a sandwich.
  • In a microwave safe bowl, melt chocolate chips and coconut oil in 30 second increments until smooth. Mine took about 1 min.
  • Dip each banana sandwich in the chocolate to cover completely. Place on wax paper.
  • Freeze for 1 hour until bananas are frozen.
  • Store in an air tight container in the freezer. Enjoy!
