So naturally, I had to figure out how to make it into breakfast. Enter: carrot cake overnight oats. And yes, they’re just as good as they sound.
These aren’t just your basic oats thrown in a jar. We’re talking grated carrots, cinnamon, nutmeg, a little vanilla, and all the cozy flavors you know and love from the real thing — but in a form you can actually justify eating before noon. I also boosted these with protein powder, chia seeds, and flax seed because we love a breakfast that actually keeps us full. Toddler life is no joke and I need something that’s going to hold me over until lunch without thinking about snacks every 20 minutes.
The best part? You make these the night before and wake up to breakfast already done. On busy mornings (so, every morning), that’s basically a miracle. They come together in like five minutes, and you can meal prep a few jars at once so you’re set for the whole week. Carrot Cake Overnight Oats
Ingredients
- â…“ cup rolled oats
- 1 Tbs ground flax seed
- 1 Tbs chia seeds
- 1 Tbs shredded coconut
- ½ scoop vanilla protein powder (optional)
- ¼ tsp cinnamon
- â…› tsp nutmeg
- â…› tsp ground ginger
- â…› tsp salt
- ½ tsp vanilla
- 2 Tbs shredded carrots
- 2 Tbs crushed pineapple, drained
- 1 cup almond milk or milk of choice
Instructions
- Combine all ingredients in a mason jar and shake to mix well.
- Place in the fridge overnight or at least 4 hours.
- Top with more shredded coconut, pecans or nut butter and enjoy!
