Carrot Cake Overnight Oats
Creamy Carrot Cake Overnight Oats are a fun, easy way to start a spring day. Prep them ahead to make mornings easier!

- ⅓ cup rolled oats
- 1 Tbs ground flax seed
- 1 Tbs chia seeds
- 1 Tbs shredded coconut
- ½ scoop vanilla protein powder (optional)
- ¼ tsp cinnamon
- ⅛ tsp nutmeg
- ⅛ tsp ground ginger
- ⅛ tsp salt
- ½ tsp vanilla
- 2 Tbs shredded carrots
- 2 Tbs crushed pineapple, drained
- 1 cup almond milk or milk of choice
Combine all ingredients in a mason jar and shake to mix well.
Place in the fridge overnight or at least 4 hours.
Top with more shredded coconut, pecans or nut butter and enjoy!
