I'M SO GLAD YOU'RE HERE!

#DOSTUFF

I must admit, ever since the Japanese cheesecake trend went viral online I have been skeptical but intrigued, so 8 months later, I finally made it, except I put a twist on it that I think puts all other recipes to shame. I took the concept, scrapped the traditional ingredients, and made it into something that tastes exactly like banana pudding, is packed with protein from cottage cheese, and comes together without turning on a single burner. No baking, no water bath, no separating eggs. Just a blender, a glass dish, and eight hours of patience while your fridge does all the work.

Before you click away at the mention of cottage cheese in a dessert, hear me out. You cannot taste it. At all. Once you blend it with an immersion blender it goes completely smooth and creamy and transforms into the most perfect cheesecake-like base you’ve ever had. Maple syrup, vanilla, cinnamon, and a swirl of Biscoff spread (or cookie butter) take it somewhere that tastes genuinely indulgent and nothing like the container it started in. This is the trick that makes high protein desserts actually worth making because the texture and flavor are there from the very first bite.

The layers are what make this feel special. Sliced bananas, the cottage cheese mixture, a ribbon of cookie butter swirl, more cottage cheese, and then Simple Mills cinnamon graham crackers pressed right into the top before the lid goes on. Eight hours later those crackers have softened into something that tastes exactly like the nilla wafers in a classic banana pudding but with cleaner ingredients and way more protein. The whole dish sets up into something sliceable and creamy and so beautiful in the glass dish that people will not believe you made it at home. I have been eating mine by the spoonful all week!

This is the recipe for when you want something that feels like dessert, tastes like dessert, and lets you feel completely good about going back for seconds. It is meal prep friendly, makes enough to share, and gets better the longer it sits. Make it Sunday night and thank yourself all week.

Why You’ll Love This Recipe:

  • The cottage cheese blends completely smooth and completely disappears into the filling so all you taste is the most creamy, dreamy, banana pudding flavored cheesecake with zero cottage cheese flavor whatsoever
  • This is a no bake, no oven, no water bath recipe that comes together in about fifteen minutes of active work before the fridge takes over completely making it one of the most low effort impressive desserts on the blog
  • The Biscoff swirl and Simple Mills graham crackers take this far beyond a standard banana pudding and make it something completely unique and completely addictive that nobody can quite identify until you tell them what is in it
  • Eight hours in the fridge means you can make this the night before and have the most stunning and satisfying dessert ready to slice and serve with zero day-of effort

Key Ingredients:

  • Cottage cheese: Blended with an immersion blender until completely smooth before anything else goes in. This is the step that transforms cottage cheese from a lumpy ingredient into a silky, protein packed base that is completely indistinguishable from cream cheese in the final dish
  • Maple syrup: The natural sweetener that adds a warm, subtle caramelized sweetness that pairs beautifully with the banana and cinnamon flavors throughout. It dissolves into the blended cottage cheese base seamlessly for a completely uniform sweetness in every bite
  • Biscoff spread: Swirled through the cottage cheese mixture in ribbons before the lid goes on so it creates those beautiful streaks of cookie butter flavor that you hit unexpectedly in the middle of a bite. It also adds that warm spiced Biscoff flavor that elevates this from a standard banana pudding into something completely special
  • Sliced bananas: Layered directly on the bottom of the dish before the cottage cheese mixture goes in so they soften slightly as everything sets and become that classic banana pudding layer that anchors the whole dessert
  • Simple Mills cinnamon graham crackers: Pressed into the top of the assembled dish before the lid goes on so they soften into the cottage cheese mixture over the eight hour set time and create that classic banana pudding nilla wafer texture that makes every bite taste so nostalgic and so familiar
  • Cinnamon: Stirred into the cottage cheese mixture for warmth and that cozy spiced note that ties the banana, cookie butter, and graham cracker flavors together into one cohesive and completely irresistible dessert

Tips for Success:

  • Blend the cottage cheese with the immersion blender until it is completely smooth with absolutely no lumps before adding any other ingredients. Even small lumps of cottage cheese will be detectable in the final texture so take your time and blend thoroughly
  • Layer the bananas, cottage cheese mixture, Biscoff swirl, more cottage cheese mixture, and then press the graham crackers in that exact order so every layer is distinct and every bite has the full banana pudding experience
  • Swirl the Biscoff spread gently rather than stirring it fully into the mixture so it stays in visible ribbons throughout rather than blending completely into the base and losing its distinct flavor pockets
  • The full eight hour set time is important. Less time means the graham crackers have not softened into that perfect nilla wafer texture and the whole dish has not set firmly enough to slice cleanly

Storage:

Store banana pudding Japanese cheesecake covered tightly in the glass dish or transferred to an airtight container in the refrigerator for up to four days. The graham crackers continue softening slightly as it sits which some people actually prefer over the first day texture. The bananas may darken slightly over time which is completely normal and does not affect the flavor. This dish does not freeze well as the cottage cheese texture changes significantly when frozen and thawed.

FAQ:

Can I taste the cottage cheese in the final dish?
No and this is the question everyone asks and the answer is genuinely no. Blending the cottage cheese completely smooth with the immersion blender before adding any other ingredients removes every trace of the cottage cheese flavor and texture. What you end up with tastes exactly like a cream cheese or mascarpone based filling with none of the cottage cheese quality that people find off-putting. It is one of the most surprising and satisfying kitchen transformations in any recipe on this blog.

Can I use cream cheese instead of cottage cheese?
Yes but you will lose the high protein benefit that makes this recipe so appealing as a healthier dessert option. If you prefer the flavor of cream cheese or do not have cottage cheese on hand use eight ounces of softened cream cheese blended with the other ingredients the same way. The texture will be slightly denser and richer but equally delicious.

Can I use a different cookie instead of Simple Mills graham crackers?
Absolutely. Regular honey graham crackers, Biscoff cookies, or vanilla wafers all work beautifully here and each one gives you a slightly different flavor profile in the finished dish. Biscoff cookies pressed into the top alongside the Biscoff swirl doubles down on the cookie butter flavor in the most incredible way if you are a true Biscoff enthusiast.
