Granola is one of my favorite toppings and snacks but unfortunately most store bought brands are loaded with sugar so when I realized how easy it is to make, I started adding it to my weekly meal prep rotation.

This is my favorite classic granola recipe with notes of cinnamon and vanilla. It’s a great base recipe to enjoy as is or jazzed up with ingredients like mini chocolate chips, dried cranberries or whatever your heart desires!

Having a jar of this vanilla cinnamon granola on hand means you’re always just a scoop away from a nutritious and satisfying snack. It’s perfect for busy mornings when you need a quick breakfast or for packing in lunchboxes as a midday pick-me-up. Store it in an airtight container, and you’ll have a crunchy, flavorful addition to your pantry that’s as versatile as it is irresistible!

Vanilla Cinnamon Granola

Ingredients:

  • 3 cups rolled oats
  • 2 Tbs coconut oil, melted
  • 2 Tbs olive oil
  • 1/4 cup maple syrup
  • 1/2 Tbs brown sugar
  • 1 tsp vanilla
  • 1/2 cup chopped pecans
  • 1/2 cup shredded coconut
  • 1 tsp cinnamon
  • pinch of salt

Directions:

  1. Combine all ingredients into a large mixing bowl, stirring until all the oats are evenly coated.
  2. Spread out into an even layer on a large baking sheet and bake at 325 for about 20 minutes or until just golden brown. Let cool.
  3. Once granola is completely cooled, transfer to a large jar or air tight container and enjoy for up to 2 weeks.
