Granola is one of my favorite toppings and snacks but unfortunately most store bought brands are loaded with sugar so when I realized how easy it is to make, I started adding it to my weekly meal prep rotation.
This is my favorite classic granola recipe with notes of cinnamon and vanilla. It’s a great base recipe to enjoy as is or jazzed up with ingredients like mini chocolate chips, dried cranberries or whatever your heart desires!

It’s perfect for busy mornings when you need a quick breakfast or for packing in lunchboxes as a midday pick-me-up. Vanilla Cinnamon Granola
Ingredients:
- 3 cups rolled oats
- 2 Tbs coconut oil, melted
- 2 Tbs olive oil
- 1/4 cup maple syrup
- 1/2 Tbs brown sugar
- 1 tsp vanilla
- 1/2 cup chopped pecans
- 1/2 cup shredded coconut
- 1 tsp cinnamon
- pinch of salt
Directions:
- Combine all ingredients into a large mixing bowl, stirring until all the oats are evenly coated.
- Spread out into an even layer on a large baking sheet and bake at 325 for about 20 minutes or until just golden brown. Let cool.
- Once granola is completely cooled, transfer to a large jar or air tight container and enjoy for up to 2 weeks.
