If you love peanut butter cups but want a healthier version you can snack on every day, you’re going to love this recipe. These no-bake peanut butter cups are made with just four simple ingredients: peanut butter, honey, cinnamon, and dark chocolate. They’re naturally sweetened, refined sugar-free, and come together in less than 15 minutes.

I first made these on a day when I was craving something sweet but didn’t want to turn on the oven. (which is a blessing in today’s heat!!) The combination of creamy peanut butter, warm cinnamon, and rich chocolate is irresistible — and the best part is, you can store them in the fridge or freezer for quick grab-and-go treats. Whether you make them for meal prep, a party, or just because, these will quickly become a staple in your kitchen. ENJOY!

Healthy No Bake Peanut Butter Cups

Ingredients:

  • 1 cup rolled oats
  • 1 cup creamy peanut butter
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 cup chopped dark chocolate
  • 1 Tbs coconut oil
  • Sea salt and/or chopped peanuts for topping

Directions:

  1. In a medium bowl, combine oats, peanut butter, honey, cinnamon and salt and mix until combined.
  2. Scoop out into a muffin tin about half way full and press down with a spoon.
  3. Melt chocolate chips and coconut oil in a bowl (a measuring cup with a spout works great for this)
  4. Pour chocolate on top of peanut butter mixture making a 1/2 inch layer.
  5. Top with sea salt or chopped peanuts.
  6. Refrigerate or freeze until chocolate is set.
  7. Remove from muffin tin and enjoy for up to 2 weeks.
  8. Store in an air tight container in the fridge!
