No Bake Peanut Butter Oat Cups
Healthy no bake peanut butter cups made with a thick oat and peanut butter filling sweetened with honey and cinnamon, topped with a smooth dark chocolate and coconut oil layer, finished with flaky sea salt or chopped peanuts. Eight ingredients, fifteen minutes, naturally sweetened, and keeps in the fridge for two weeks or freezer for a month.

- 1 cup rolled oats
- 1 cup creamy peanut butter
- ¼ cup honey
- ½ tsp cinnamon
- Pinch of salt
- 1 cup chopped dark chocolate
- 1 Tbs coconut oil
- Sea salt and/or chopped peanuts for topping
In a medium bowl, combine oats, peanut butter, honey, cinnamon and salt and mix until combined.
Scoop out into a muffin tin about half way full and press down with a spoon.
Melt chocolate chips and coconut oil in a bowl (a measuring cup with a spout works great for this)
Pour chocolate on top of peanut butter mixture making a 1/2 inch layer.
Top with sea salt or chopped peanuts.
Refrigerate or freeze until chocolate is set.
Remove from muffin tin and enjoy for up to 2 weeks.
Store in an air tight container in the fridge!
