Chocolate Covered Frozen Peanut Butter Banana Sandwiches
Ingredients:
- 1 banana
- peanut butter
- 1/3 cup dark chocolate chips (or semi sweet)
- 1/2 Tbs coconut oil
Directions:
- Cover a cutting board in wax paper.
- Slice banana into 1/2″ slices.
- Top one banana coin with peanut butter and place another coin on top of it to make a sandwich.
- In a microwave safe bowl, melt chocolate chips and coconut oil in 30 second increments until smooth. Mine took about 1 min.
- Dip each banana sandwich in the chocolate to cover completely. Place on wax paper.
- Freeze for 1 hour until bananas are frozen.
- Store in an air tight container in the freezer. Enjoy!
