I'M SO GLAD YOU'RE HERE!

#DOSTUFF

If you’ve been anywhere near social media lately, you’ve probably seen the dot cakes taking over. These little cups layered with cake, frosting, and covered in colorful dot sprinkles have been going viral out of New York City and while I was skeptical at first, honestly the hype is completely deserved. They’re adorable, they’re indulgent, and they photograph like a dream. But if you’re not in NYC and you’re craving one, I’ve got you covered because we’re making a brownie version at home and it might actually be better than the original.

Introducing Dot Cake Brownies. Same concept, but with a chocolate upgrade. We start with a layer of fudgy brownie on the bottom, add a swoop of rich chocolate frosting in the middle, then pile on brownie flavored whipped cream on top, and finish the whole thing off with a generous coat of those iconic dot sprinkles. The result is this perfectly layered little cup that looks like it came straight from a trendy NYC dessert shop but took you maybe 20 minutes in your own kitchen.

What I love about this recipe is that it takes something that feels really special and makes it totally doable at home. The individual cups make them perfect for serving at a party, gifting to friends, or just making a fun little treat for yourself on a weeknight when you want something that feels a little extra. They’re also a huge hit with kids, which means they double as the most fun movie night snack situation you’ve ever put together.

Whether you’ve been wanting to try the viral dot cakes or you’re just a brownie lover looking for a fun new way to enjoy them, this one is for you. They’re rich, they’re creamy, they’re covered in sprinkles, and they are genuinely so fun to make and eat. Once you try them in brownie form I have a feeling you won’t be going back to the original. Why You’ll Love This Recipe:

  • This is the viral NYC dot cake trend recreated at home in brownie form and it might actually be better than the original because fudgy brownie is a significantly more exciting base than regular cake
  • The brownie flavored whipped cream is the detail that ties every layer together and makes these taste completely cohesive from the first bite all the way down through the chocolate frosting to the fudgy brownie bottom
  • Individual cups make these perfect for parties, movie nights, gifting, and any occasion when you want something that looks completely impressive and took about twenty minutes
  • The upside down dip into rainbow dot sprinkles is the most satisfying assembly step and gives every cup that perfect fully coated colorful top that makes these look exactly like the ones going viral out of New York

Key Ingredients:

  • Ghirardelli Double Chocolate brownie mix:ย The brownie base that is superior to every other box mix option and the one strongly recommended for these dot cakes. Two bags in a nine by thirteen pan gives you enough brownies to cut twelve perfect circles and the fudgy dense result holds together beautifully when cut with a cookie cutter
  • Circle cookie cutter:ย The tool that turns a pan of brownies into perfectly uniform rounds that fit snugly into the bottom of each cup. Use one that matches the diameter of your cups exactly so the brownie layer sits flush against the sides with no gaps
  • Store bought chocolate frosting:ย The middle layer that adds richness and a silky chocolate contrast between the dense brownie bottom and the light whipped cream top. Transfer it to a piping bag for the cleanest most controlled application or swirl it on with a spoon for a more casual look
  • Cool Whip:ย The base of the brownie whipped cream that holds its shape in the cup and in the fridge without deflating the way real whipped cream would over four days of storage. One full tub combined with the dry brownie mix creates the most uniquely flavored and texturally perfect top layer
  • Dry brownie mix:ย Half a cup of the dry powder stirred directly into the Cool Whip is the most unexpected and most genius ingredient in the whole recipe. It turns plain whipped topping into something that tastes specifically and unmistakably like brownie batter which makes every bite of the top layer taste like eating dessert inside a dessert
  • Rainbow dot sprinkles:ย The finishing touch that makes these look exactly like the viral original and the step that makes every single person who sees them immediately want one. The upside down dip technique coats the entire top evenly in one satisfying motion

Tips for Success:

  • Let the brownies cool completely before cutting the circles. Warm brownies are too soft and will crumble or squish when you press the cookie cutter through them. A fully cooled and slightly chilled brownie cuts cleanly and holds its shape perfectly
  • Smooth the brownie whipped cream completely flat and flush against the edges of the cup before the sprinkle dip step. Any gaps or uneven spots will not pick up the sprinkles evenly and the fully coated look requires a perfectly smooth and level surface
  • Press gently and evenly when dipping the upside down cup into the sprinkles so the dots adhere uniformly all the way across the top without any bare patches
  • Make the brownie whipped cream right before assembling rather than ahead of time so it is at the best consistency for spreading and coating the rim of the cup

Storage:

Store dot cake brownies in the fridge for up to four days. The individual cup format keeps each one perfectly contained and the Cool Whip base holds its shape and texture throughout the full storage window far better than real whipped cream would. Keep them upright in the fridge so the sprinkle coated top stays intact. These do not freeze well as the Cool Whip and brownie texture both change significantly when frozen and thawed.

FAQ:

Can I use a different brownie mix?
Yes but Ghirardelli Double Chocolate is genuinely the recommended choice here because the fudgy dense result holds up better to cookie cutter cutting and is rich enough to balance the sweetness of the chocolate frosting and brownie whipped cream. Any fudgy box mix works but avoid cake-style brownie mixes that bake up too soft and crumbly to cut cleanly into rounds.

What cups or jars work best for these?
Clear cups or jars that show the layers are the most visually striking and the most true to the viral dot cake format. Small clear plastic cups, mason jars, or straight sided glass cups all work beautifully. The key is choosing a vessel with a diameter that matches your cookie cutter so the brownie circle sits flush against the sides and the layers stay defined and visible from the outside.

Can I use real whipped cream instead of Cool Whip?
You can for same day serving but Cool Whip is strongly recommended for any advance preparation or storage. Real whipped cream deflates within a few hours and will not hold the smooth flat surface you need for the sprinkle dip technique. Cool Whip keeps its shape for the full four days in the fridge and is what makes these practical to make ahead for a party or gifting situation.

Ingredients

  • 3 boxes brownie mix (and everything it requires) (I personally think Ghirardelli double Chocolate is superior)
  • 1 tub chocolate frosting
  • 1 tub Cool Whip
  • 1/2 cup brownie mix (the dry powder)
  • 1 cup rainbow dot sprinkles

Instructions

  • Bake brownies according to box. For 12 dot cakes I did 2 bags of Ghirardelli brownie mix in a 9×13 pan for 40 minutes. (you can do 1 box of brownies it just won't make as many)
  • Using a circle cookie cutter the same size as the bottom of your cups or jars, cut out brownies and place in the bottom of your vessel.
  • Transfer chocolate frosting into a piping bag and add a layer of frosting (or just swirl it on with a spoon)
  • In a medium bowl, mix Cool Whip with 1/2 cup dry brownie mix until combined.
  • Add a generous serving of brownie cool whip on top of the chocolate frosting and smooth completely so its flat and level against the edge of the cup.
  • Dump sprinkles out onto a plate and dip cup upside down pressing gently into the sprinkles.
  • ENJOY! Store in the fridge for up to 4 days.
