A loaded baked potato is already one of the most perfect things you can eat and this loaded baked potato dip takes every single thing that makes it so good and turns it into a warm gooey scoopable dip that belongs on every game day table from now until forever. Cream cheese and sour cream blended with ranch seasoning, crispy bacon bits, and shredded cheese baked in a small casserole dish until bubbling and golden, then piled with more bacon, fresh green onions, and served with potato chips for dipping. It is everything you want from a loaded baked potato in a format that is meant to be shared and it is absolutely impossible to stop eating.
The cream cheese and sour cream base is what gives this dip that rich, tangy, thick consistency that holds up beautifully in the oven and stays creamy and scoopable all the way to the bottom of the dish. Blended together until completely smooth before the mix-ins go in so every single scoop has that perfectly uniform creamy base that coats the chip all the way through. The ranch seasoning does the heavy lifting on flavor and ties everything together in that classic loaded baked potato way that makes this taste immediately familiar and immediately comforting.

Bake it uncovered at 375 until the cheese on top is fully melted, golden in spots, and bubbling at the edges which takes about twenty to twenty five minutes. That is the moment you pull it out and hit it immediately with the remaining bacon bits and sliced green onions so they sit on top of the warm cheese and look absolutely stunning before it even makes it to the table. The contrast of the warm gooey dip and the cool fresh green onions and the crispy bacon on top is one of those combinations that makes a dip look way more elevated than the effort required.
Potato chips are the obvious and correct choice for dipping because the whole loaded baked potato theme demands it, but this dip works just as well with crackers, toasted baguette slices, or even pretzel chips if you want something with a little more structure. Make it in an oven-safe dish you can take straight from the oven to the table and serve it immediately while it is at peak gooey bubbling perfection. This is the game day dip that clears the table every single time and the one people are still talking about on the drive home.
