It’s been awhile sine I’ve made muffins and today my coffee looked so lonely so I made him a buddy: the cinnamon coffee muffin.
I’ve recently discovered instant coffee (thanks to the famous dalgona coffee that’s prancing around all over the internet… hi, I see you) and am having so much fun making coffee flavored everything.
These muffins are so soft and fluffy and seriously so yummy. I’m going to start making muffin making a regular thing.

Cinnamon Coffee Muffins
Ingredients
Frosting:
- 8oz cream cheese, softened
- 1/4 cup powdered sugar
- 2 tsp instant coffee
- 1 tsp cinnamon
- splash of vanilla
Muffins:
- 2 cups flour
- 3/4 cup sugar
- 2 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 1 Cup milk
- 2 Tbs instant coffee
- 1/2 cup (1 stick) butter, melted
- 1 egg
- splash of vanilla
Directions:
- Preheat oven to 375 degrees F.
- In a small bowl mix all frosting ingredients together until fluffy and combined. Keep in fridge while we make the muffins.
- In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, salt, and nutmeg and whisk until combine.
- In another bowl mix milk, instant coffee, melted butter, egg and vanilla until combined.
- Slowly stir the wet ingredients into the dry ingredients and fold until JUST combined. Do NOT over mix!
- Line a muffin tin and fill each cup with muffin batter.
- Make for 18 minutes.
- Once muffins have completely cooled, pipe on your frosting or spread it with a knife.
- Enjoy!!
