Carrot Cake Protein Balls

No bake carrot cake protein bites made with seven medjool dates, almond butter, vanilla protein powder, ground flax seed, shredded carrots, rolled oats, and a warm blend of cinnamon, nutmeg, cloves, and allspice. Ten minutes in the food processor, rolled into eight bites, and stored in the fridge for up to a week. Naturally sweetened, high protein, and the perfect nourishing spring snack.

Ingredients
  

  • 7 medjool dates pitted
  • ⅓ cup almond butter
  • 1 scoop vanilla or unflavored protein powder
  • 1 Tbs ground flax seed
  • 1 tsp vanilla
  • pinch of salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp allspice
  • ½ cup shredded carrots
  • ½ cup rolled oats

Instructions
 

  • In a food processor, blend dates, almond butter, protein powder, flax seed, vanilla, salt, cinnamon, nutmeg, ground cloves, and allspice together until combined.
  • Take the blades out and add oats and carrots and mix in with a spatula. (can also pulse these in the food processor if you prefer)
  • Using your hands or a cookie scoop, roll out 8 balls.
  • Store in an air tight container in the refrigerator for up to 1 week.
