Chocolate Dough:
- ¼ cup butter
- ¼ cup brown sugar
- 2 Tbsp white sugar
- 1 egg
- ½ tsp vanilla
Dry Ingredients:
- ¼ cup + 3 Tbs flour
- 3 tbs cocoa
- ¼ tsp baking soda
- ¼ tsp salt
Mix-ins:
- ¼ cup dark chocolate chips
For the Peanut Butter Glaze:
- ½ tbs milk
- 2 tbs powdered sugar
- 2 tbs creamy peanut butter
Make the Peanut Butter Dough:
Preheat your oven to 350℉ and grease an 8" cast iron skillet.
In a large bowl or bowl of a stand mixer, whisk together melted butter and both sugars until smooth.
Add egg, vanilla and peanut butter and whisk until smooth.
Add all the dry ingredients and mix with a spatula until just combined.
Fold in chocolate chips.
Drop globs of cookie dough sporadically in the cast iron leaving room for the chocolate dough.
Make the Chocolate Dough:
In the same bowl (now empty, no need to do more dishes!) whisk the melted butter and both sugars until smooth.
Add egg and vanilla and whisk until smooth.
Add dry ingredients and stir with a spatula until just combined.
Fold in chocolate chips.
Drop globs of dough in the open spots on the cast iron until no spots remain.
Bake for 25-30 min until edges are golden and middle slightly springs back when you touch. Start checking around 25 min, it will continue to cook in the cast iron one you take it out but you want to make sure its baked!
Make the Glaze:
In a small measuring cup with a spout, combine milk, powdered sugar and peanut butter and whisk until smooth. Add more milk until desired consistency is reached, should easily fall off of a spoon.
Drizzle Peanut Butter Glaze over the top of the cookie skillet and sprinkle with sea salt.
Top with vanilla ice cream and enjoy immediately!
