Cinnamon Apple Ring Pancakes
Cinnamon apple ring pancakes made by slicing a honey crisp apple into half inch rounds, punching out the cores with a small circle cookie cutter, dipping each ring fully in pancake batter until completely coated, and cooking on a buttered skillet until golden on both sides. While still warm spread butter on both sides of each ring and toss in a cinnamon sugar mixture before plating. The most fun and kid-friendly fall breakfast that uses a honey crisp apple as the star of a warm spiced pancake in the most clever and adorable way.

Cuisine American
- 2 honey crisp apples
- 1 serving pancake batter (box mix is fine!)
- butter
- ⅓ cup granulated sugar
- ½ tsp cinnamon
In a medium bowl, mix together granulated sugar and cinnamon and set aside.
Prepare one serving of pancake batter according to box instructions. I used Kodiak Mix for mine but any will do!
Turn your apples on their sides and carefully cut them into discs about ¼ inch thick.
Use a small circle cookie cutter or something circular to punch out the cores. The slices should look like rings now.
Heat a large skillet over medium high heat and add 1 tbs oil or butter.
Dip each apple ring into the pancake batter making sure each side is coated and carefully place it in the skillet to begin cooking. I cook 3 at a time.
Flip the rings after 3 minutes and first side is golden. Cook for 2-3 min more until the other side is golden and remove from pan.
Spread butter on each side and toss in cinnamon sugar before plating.
Enjoy with maple syrup.
