High Fiber Granola Bars
High fiber granola bars made with toasted rolled oats, quinoa, and sunflower seeds bound together with peanut butter, honey, and coconut oil and loaded with ground flax seed and chia seeds for maximum fiber and omega 3s. Pressed into a loaf pan, drizzled with chocolate, and chilled until firm. Naturally sweetened, meal prep friendly, and keeps in the fridge for a week or freezer for three months.

- 1 cup rolled oats
- ⅓ cup uncooked quinoa
- ¼ cup sunflower seeds
- 1 tsp cinnamon
- ½ cup creamy peanut butter
- ⅓ cup honey
- 1 Tbs coconut oil
- splash of vanilla about 1 tsp
- pinch of salt about 1/4 tsp
- 2 Tbs ground flax seed
- 1 Tbs chia seeds
- ¼ cup chocolate chips
- ½ Tbs coconut oil
Preheat oven to 325 F. Line a 9×5 loaf pan with parchment paper.
On a baking sheet, combine oats, quinoa, sunflower seeds and cinnamon. Bake for 8-10 min.
While the oats are toasting, in a medium sauce pan, combine peanut butter, honey, coconut oil and salt and stir until creamy and smooth.
Remove from heat and stir in vanilla.
Transfer oat mixture into a bowl and add peanut butter mixture, flax seed and chia seeds and stir until everything is coated and combined.
Transfer mixture to the loaf pan and press into the bottom pushing it into all the corners.
Melt chocolate chips and coconut oil in a small bowl until smooth and drizzle on top of the bars.
Place loaf pan in the refrigerator or freezer to firm up.
Pull the parchment to release the bars from the loaf pan and cut into bars.
