Potato Chip Cookies

Soft and chewy potato chip cookies made with butter, brown sugar, an extra egg yolk for richness, chocolate chips, and three quarters of a cup of crushed potato chips folded throughout. The chips add a satisfying crunch and a salty contrast that makes every bite taste like the best possible sweet and salty combination. Eight to ten minutes in the oven and completely set on the pan for that perfect gooey center with crispy edges.

Ingredients
  

Wet Ingredients:

  • 1 cup butter
  • 1 cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 egg yolk
  • 1 Tbs vanilla

Dry Ingredients:

  • 2 cups flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¾ tsp salt

Mix-ins:

  • ¾ cup chocolate chips
  • ¾ cup crushed potato chips

Instructions
 

  • Preheat oven to 350°F.
  • In a large bowl or a bowl of a stand mixer, cream together, butter, brown sugar, and white sugar until light and fluffy.
  • Add egg and egg yolk and vanilla and mix until combined.
  • In a separate large bowl whisk together, baking powder, baking soda, salt, and flour.
  • Slowly, add dry ingredients into wet ingredients and mix until just combined.
  • Add chocolate chips and potato chips and fold in with a spatula.
  • Scoop into 2 Tbs size balls, and place evenly on a baking sheet.
  • Bake for 8 to 10 minutes when the edges are brown, but the middles are still gooey.
  • Let cool completely before removing from pan. Cookies will set and give you that nice gooey center with crunchy edges!
