Pumpkin Chocolate Chip Baked Oats

Single serve pumpkin chocolate chip baked oats made with half a cup of rolled oats, pumpkin puree, milk, maple syrup, vanilla, cinnamon, pumpkin pie spice, and a generous handful of dark chocolate chips stirred together in a ramekin and baked at 415 degrees for thirty minutes until golden on top and set in the center. The coziest single serving fall breakfast that tastes like pumpkin pie for breakfast and is genuinely nourishing enough to earn that description.

Ingredients
  

  • ½ cup rolled oats
  • 2 tbs pumpkin puree
  • ½ tsp pumpkin pie spice
  • ¼ tsp cinnamon
  • 1 tbs maple syrup
  • ½ tsp baking powder
  • splash of vanilla
  • ½ cup milk
  • 1 tbs dark chocolate chips

Instructions
 

  • Preheat oven to 415℉ and grease a ramekin or small dish.
  • Place all ingredients except chocolate chips into a high speed blender and blend until smooth.
  • Pour batter into the greased ramekin and top with chocolate chips.
  • Place ramekin on a baking sheet and bake for 30 min until a toothpick comes out clean.
  • Serve and enjoy immediately.
