7 Carb Chocolate Peppermint Cookies

Okay I’m on a Christmas cookie roll!!

I have to admit; the holidays are usually always a struggle for me because a pastry chef with a HUGE sweet tooth and all the sweets this time of year is not a good combination. I almost always go overboard and then feel terrible come January 1st.

Not only is this not healthy, but it’s always a huge blow to my self esteem and does nothing to support a positive body image. So I’ve made a commitment that this will NOT happen this year and I will be able to enjoy myself without going crazy and stay on track with my healthy lifestyle.

There is no moral value to food, it is not meant to control us or steal our joy. There are ways to enjoy the holidays, have your treats and not deprive yourself. There are also ways to take your favorite recipes and make them healthier! I am loving spending time in the kitchen and finding healthy alternatives to all the yummy things I like to make during Christmas time.

One of my most recent creations is only 5 ingredients and 7 carbs!! Can you believe it?!?! They taste like heaven and you’re going to love them. Ghirardelli just came out with Peppermint Chunks for baking which are perfect for these little Christmas Cookies. I also used my all time favorite Almond Butter “Justin’s Maple Almond Butter” to give it a nice rich, nutty flavor.

Are you ready for the recipe?!?!!? Here it is!!

 

Chocolate Peppermint Cookies (makes 10 cookies)

Ingredients:

  • ½ cup Justin’s Maple Almond Butter (I also tried it one time with Wild Friends Chocolate Coconut Peanut Butter and that was really yummy too)
  • ½ cup pumpkin puree
  • 1 Tbs unsweetened cocoa powder
  • 3 Tbs egg whites
  • ½ cup Ghirardelli Peppermint Chunks

Directions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients except the peppermint chunks in a bowl until combined.
  3. Fold in the peppermint chunks.
  4. Make 10 little balls out of the dough and bake for about 8-10 minutes or until cookies are done
  5. ENJOY!!
