Avocado Hummus

Happy Sunday beautiful people!!

I’m going to get right to the point. Do I have any avocado fans out there??

If so, you’re going to love this recipe. If not, how do you not like avocados?!?!

I mean look at this creamy, gorgeous, happy little fruit just waiting to be eaten.

Not only are avocados beautiful and delicious but they are LOADED with vitamins and nutrients that give you that healthy glow. People might ask, “are you pregnant?!” and you can just say, “nah, I’m just eating good.”

Here are some more avo benefits:

  • More potassium than a banana
  • loaded with heart healthy monounsaturated fatty acids
  •  tons fo fiber
  • can lower cholesterol
  • the fats in avocado can help you absorbs nutrients from other foods

Are you convinced yet? If not, you might be after you try this recipe for avocado hummus. Imagine if guacamole and hummus had a baby and BAM. What makes it even better is using Foster’s Pickled Veggies to dip. The spiciness gives it a little zing and takes the whole experience over the top.

Avocado Hummus

Ingredients:

  • 1 (15 oz) can chick peas, drained
  • 2 medium ripe avocados , cored and peeled (13 oz before cored and peeled)
  • 3 Tbsp olive oil , plus more for serving
  • 1 1/2 Tbsp tahini
  • 3 Tbsp fresh lime juice
  • 1 clove garlic , peeled
  • Salt and freshly ground black pepper
  • 1/8 tsp cumin
  • Red pepper flakes , for topping

Directions:

  1. Blend chick peas, olive oil, tahini, lime juice, and garlic in a food processor until smooth, about 2 minutes.
  2. Season with salt and pepper to taste, add cumin and avocados and pulse mixture until smooth and creamy, about 1 – 2 minutes longer.
  3. Serve topped with more olive oil if desired and sprinkle with red pepper flakes. Serve with pita chips, crackers and Foster’s Farms Pickled Veggies.
