There’s something so cozy about a warm fall breakfast. I love waking up and making a cozy bowl of cinnamon apple oats or cute pumpkin waffles while sipping my coffee and doing my morning devotional.

I hope these recipes inspire you to romanticize your mornings and make this the best fall yet. Let me know which ones you try and which is your favorite!

Apple Cinnamon Oatmeal

Ingredients:

  • 1/2 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1 cup milk
  • splash of vanilla
  • 1 Tbs brown sugar
  • 1 Tbs ground flax seed
  • 1/2 Tbs chia seeds

For the cinnamon apples

  • 1/2 cup honey crisp apple, chopped
  • 1/2 tsp cinnamon
  • 1 tsp brown sugar
  • 1 Tbs coconut oil
  • honey (optional)

Directions:

  1. In a sauce pan, add oats and spices and toast until fragrant.
  2. Add milk, vanilla, brown sugar, flax seed and chia seeds and stir until combined. Cook until the oats absorb the liquid and a thick consistency forms.
  3. Meanwhile, combine chopped apples, cinnamon and brown sugar in a bowl and toss until coated.
  4. Heat coconut oil in a sautee pan and sautee coated apples until apples are cooked. Drizzle honey if desired.
  5. Transfer oats into a bowl and top with apples. Enjoy!

Pumpkin Spice Waffles

Ingredients:

  • 1 3/4 cup flour
  • 2 tsp brown sugar
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • 1 1/4 cup buttermilk
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/4 cup unsalted butter, melted

Directions:

  1. Combine flour, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon and salt in a bowl and whisk.
  2. Add buttermilk, pumpkin puree, eggs and melted butter and fold until just combined. Batter should be lumpy.
  3. Spray a waffle iron and fill with batter.
  4. Serve with syrup, almond butter or honey. Enjoy!

Maple Oatmeal Muffins

Ingredients:

  • 2 cups rolled oats
  • 1 cup milk
  • 1/2 cup maple syrup or honey
  • 1/3 cup canola oil
  • 2/3 cup light brown sugar
  • 2 eggs
  • 1.5 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. In a bowl combine oats, milk syrup, brown sugar and eggs.
  2. Add flour, baking powder, baking soda, cinnamon and salt and stir until combined.
  3. Line or spray a muffin tin and fill each cup 3/4 of the way full.
  4. Bake at 400 for 18-20 minutes. Enjoy!
