Iced coffee does not take a holiday in December and neither do I. This gingerbread cold foam latte is the drink I make when I want my morning coffee to feel completely festive without switching to something hot. A homemade gingerbread syrup made with brown sugar, cinnamon, ginger, nutmeg, and cloves stirred into cold brew, topped with a spiced gingerbread cold foam that melts into every sip in the most incredible way. It is cozy and cold at the same time and it tastes exactly like December in a glass.
The homemade gingerbread syrup is the part that makes this drink so special and it is so much easier to make than it sounds. Water, brown sugar, and all the warm spices simmered together for about five minutes until slightly thickened and fragrant, then finished with a splash of vanilla and cooled before going in the fridge. It keeps for two weeks which means you make it once and have the most festive coffee syrup ready to add to lattes, cold brews, oatmeal, pancakes, or anything else that needs a little holiday magic all season long. The smell alone when it is simmering on the stove is worth making it.

The gingerbread cold foam is what takes this from a really good iced latte to something that looks and tastes like a specialty coffee shop drink you paid eight dollars for. Heavy cream frothed with cinnamon, nutmeg, and a splash of the gingerbread syrup until thick and cloudy and perfectly spiced. Pour it right over the top of your cold brew and watch it slowly melt down into the coffee in that way that makes any iced latte look absolutely stunning before you even stir it. This is the drink you make when you want your morning to feel like a little moment worth savoring.
The whole thing comes together in about ten minutes once your syrup is made and it is the kind of holiday coffee drink that makes working from home in December feel genuinely luxurious. No drive through, no eight dollar price tag, just your own kitchen and a drink that tastes like the holidays in every single sip. Make the syrup this week and you will be making this latte every single morning until January.
