I'M SO GLAD YOU'RE HERE!

#DOSTUFF

Chai latte is already one of the coziest drinks you can make at home and then I added a homemade sugar cookie syrup to it and completely ruined every other version for myself. This sugar cookie chai latte is warm, spiced, lightly sweet with that distinct vanilla and almond flavor that tastes exactly like a Christmas sugar cookie, and it comes together in about five minutes once your syrup is made. The kind of drink that makes you want to wrap yourself in a blanket and not move for the rest of the morning.

The homemade sugar cookie syrup is two ingredients plus extracts and it is the detail that makes this latte taste so specific and so good. Water and sugar simmered together until dissolved, then finished off the heat with vanilla, almond extract, and a pinch of salt. That almond extract is the secret — it is the exact flavor that makes a sugar cookie taste like a sugar cookie and it transforms a regular chai latte into something that tastes unmistakably festive and nostalgic. The syrup keeps in the fridge for two weeks so you make it once and have it ready all holiday season long.

The drink itself is incredibly simple. Sugar cookie syrup in the bottom of your mug, chai concentrate and milk heated together and poured right over, topped with whipped cream and a cookie if you are feeling festive. It can also be made iced which I love on those December days that are sunny and bright and call for something cold. Same ingredients, same syrup, just poured over ice instead. Two versions of the same incredible drink depending on your mood and the weather.

This sugar cookie chai latte is the holiday drink for the chai people, the cozy drink people, and anyone who has ever wished their morning latte tasted more like Christmas. Make the syrup this weekend, keep it in a jar in your fridge, and add it to everything. It works in hot chai, iced chai, regular lattes, steamed milk for the kids, oatmeal, pancakes. Once you have a jar of sugar cookie syrup in your fridge you will find a reason to use it every single day.
