Chocolate Covered Banana Granola Bars

They come together in about 10 minutes, store great all week, and work for breakfast, snacking, or anytime you need something satisfying on the go.

Ingredients
  

  • 1 cup rolled oats
  • ½ cup creamy peanut butter
  • 2 ripe bananas, mashed
  • â…“ cup almond flour
  • 2 Tbs cocoa powder
  • 2 Tbs chia seeds
  • 1 Tbs ground flax seed
  • 2 tsp vanilla
  • pinch salt
  • â…“ cup mini chocolate chips
  • ¼ cup salted peanuts, crushed (opitonal)

Instructions
 

  • Preheat oven to 350℉ and line an 8×8 baking dish with parchment paper.
  • In a large bowl, combine all ingredients except peanuts and mix well.
  • If it looks a little dry, add more peanut butter (or even honey!) If it looks a little too wet/soft, add more oats or almond flour!
  • Fold in chocolate chips and pour into prepared baking dish and smooth.
  • Top with crushed peanuts if using and bake for about 20-25 min until set.
  • Let cool completely and then cut into bars.
  • Store in an airtight container in the fridge for up to 1 week. Enjoy!
