Total Time 30 minutes mins
- 1 cup rolled oats
- ½ cup creamy peanut butter
- 2 ripe bananas, mashed
- ⅓ cup almond flour
- 2 Tbs cocoa powder
- 2 Tbs chia seeds
- 1 Tbs ground flax seed
- 2 tsp vanilla
- pinch salt
- ⅓ cup mini chocolate chips
- ¼ cup salted peanuts, crushed (opitonal)
Preheat oven to 350℉ and line an 8x8 baking dish with parchment paper.
In a large bowl, combine all ingredients except peanuts and mix well.
If it looks a little dry, add more peanut butter (or even honey!) If it looks a little too wet/soft, add more oats or almond flour!
Fold in chocolate chips and pour into prepared baking dish and smooth.
Top with crushed peanuts if using and bake for about 20-25 min until set.
Let cool completely and then cut into bars.
Store in an airtight container in the fridge for up to 1 week. Enjoy!
