If you’ve been on Disney TikTok lately, you already know about the cookie dough brownie ice cream sandwich at Animal Kingdom. It has been all over my feed since I got back from the parks, and when we went two weeks ago, somehow I completely missed it. I’m talking walked right past the stand, didn’t even realize it existed until I got home and saw approximately 40 videos of it on my For You page. Classic.

So naturally I did what any reasonable person would do and recreated it at home. And honestly? I think we might have made it even better. The original is a fudgy brownie on the bottom, a thick layer of creamy vanilla ice cream in the middle, and a generous layer of edible cookie dough on top. It is the kind of dessert that sounds too good to be true until you take one bite and realize it is absolutely as good as everyone said it was.

The best part about making this at home is that you can control every single layer. The brownies are rich and chewy, the vanilla ice cream is classic and creamy, and the edible cookie dough is the real star of the show. No eggs and fully safe to eat by the spoonful straight from the bowl – it’s the recipe I shared back in 2020 and it’s still just as good today.

Cookie Dough Brownie Ice Cream Sandwiches

Fudgy homemade brownies layered with creamy vanilla ice cream and topped with thick, eggless edible cookie dough. This Disney Animal Kingdom copycat comes together in a few simple steps and is the ultimate make-at-home treat for anyone who missed the original or just wants an excuse to eat it every week.

Ingredients
  

  • 1 box brownie mix and everything it calls for
  • 1 tub vanilla ice cream slightly melted
  • ½ cup butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1â…“ cup flour heat treated (10 seconds in the microwave)
  • ½ tsp salt
  • 1 tsp vanilla
  • ½ cup mini/regular chocolate chips

Instructions
 

  • Preheat your oven to 325℉ and line a 9×9 baking dish with parchment paper.
  • Make brownies according to directions on the box and let cool completely.
  • Take a flat spatula and press down the brownie layer to make it more compact.
  • Take ice cream out of freezer while you make the cookie dough to thaw slightly.
  • In the bowl of a stand mixer or using a hand mixer, cream together butter and both sugars until light and fluffy.
  • Add flour, salt and vanilla and mix to combine.
  • Add chocolate chips and fold in with a spatula.
  • Roll out cookie dough between two sheets of parchment paper into a rough 9×9 square for easy transfer.
  • Scoop slightly melted ice cream on top of the cooled brownie layer and smooth with a spatula.
  • Take off one side of the parchment paper off of the cookie dough layer and carefully flip upside down onto the ice cream layer and peel off the other side of parchment. .
  • Patch up any place that is not covered by cookie dough and return to the freezer until fully set. About 4-5 hours minimum.
  • Take ice cream sandwiches out of the dish by lifting the parchment paper and cut into bars.
