Apple crisp for breakfast is something I fully believe in and these apple crisp baked oats are my favorite way to make it happen. All the cozy fall flavors of a warm apple crisp — gooey cinnamon apples, warm spices, that soft hearty oat base — in a nourishing breakfast that is naturally sweetened with maple syrup and packed with protein from greek yogurt and egg. It tastes like dessert for breakfast in the best possible way and it is genuinely one of my most looked forward to fall morning meals.

Baked oats in general are a complete game changer for meal prep and this version specifically is one I make on repeat every fall from the first week of September straight through November. The oat mixture comes together in one bowl, the cinnamon apples get folded right in, and the whole thing bakes in about thirty minutes into something that slices cleanly into portions and reheats beautifully all week long. Make it Sunday evening, slice it into squares, and Monday through Friday morning is handled before you have even had your coffee.

The greek yogurt in the oat base is the addition that makes these baked oats so much more filling and nourishing than a standard overnight oat situation. Ingredients
  

For the Cinnamon Apples:

  • 2 Honeycrisp apples chopped
  • 1 Tbs coconut oil
  • 2 Tbsp brown sugar
  • 1 tsp cinnamon

For the Baked Oats:

  • 2 cups rolled oats
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • 1 cup almond milk
  • 1 egg
  • 1 tsp vanilla
  • 2 Tbs maple syrup
  • ½ cup Greek yogurt

Instructions
 

Cook the cinnamon apples:

  • In a medium skillet over medium heat, melt coconut oil and combine apples, brown sugar and cinnamon.
  • Toss with a spatula to make sure all the apples are coated in the cinnamon and brown sugar.
  • Saute until golden and a little tender and fragrant.

Make Oat Mixture:

  • Preheat oven to 350℉.
  • In a large mixing bowl, whisk together oats, salt, cinnamon and baking powder.
  • Add milk, egg, vanilla, maple syrup and greek yogurt and mix until combined.
  • Fold in cinnamon apples.
  • Spray an 8×8 baking dish. Pour oat batter into the pan and bake for 20-30 minutes until the top is golden brown and a toothpick comes out with just a few crumbs on it.
  • Slice and enjoy!
