Apple Crisp Baked Oats

For the Cinnamon Apples:
- 2 Honeycrisp apples chopped
- 1 Tbs coconut oil
- 2 Tbsp brown sugar
- 1 tsp cinnamon
For the Baked Oats:
- 2 cups rolled oats
- ½ tsp salt
- 1 tsp cinnamon
- ½ tsp baking powder
- 1 cup almond milk
- 1 egg
- 1 tsp vanilla
- 2 Tbs maple syrup
- ½ cup Greek yogurt
Cook the cinnamon apples:
In a medium skillet over medium heat, melt coconut oil and combine apples, brown sugar and cinnamon.
Toss with a spatula to make sure all the apples are coated in the cinnamon and brown sugar.
Saute until golden and a little tender and fragrant.
Make Oat Mixture:
Preheat oven to 350℉.
In a large mixing bowl, whisk together oats, salt, cinnamon and baking powder.
Add milk, egg, vanilla, maple syrup and greek yogurt and mix until combined.
Fold in cinnamon apples.
Spray an 8x8 baking dish. Pour oat batter into the pan and bake for 20-30 minutes until the top is golden brown and a toothpick comes out with just a few crumbs on it.
