Five ingredients and twelve minutes is genuinely all that stands between you and the most perfect individual peach cobbler you have ever had. This single serve peach cobbler is the dessert I make when I want something warm and fruity and completely satisfying without making a whole pan of something I will eat for a week. Frozen peaches, a pat of butter, brown sugar, cinnamon, and three Sweet Loren’s snickerdoodle cookie doughs pressed right on top and baked until golden and bubbling. That is the entire recipe and it is one of my favorite things I have made all summer.

The Sweet Loren’s cookie dough on top is the detail that makes this so genius and so different from a traditional cobbler topping. It bakes into these golden, crispy edged, soft centered rounds that sit on top of the bubbling peach filling like little cobbler biscuits but with that warm cinnamon sugar snickerdoodle flavor running through every bite. The snickerdoodle spice pairs with the sweet peaches and brown sugar underneath in a way that tastes intentional and perfect and honestly like you put in way more effort than dropping three dough rounds onto a ramekin.

The single serve format is what makes this so useful and so repeatable. No leftover cobbler sitting in a pan getting soggy, no commitment to a full dessert, just one perfect little ramekin baked fresh whenever you want one. It works with fresh peaches too if you have them but frozen is what makes this a year round recipe you can make without planning ahead. Pull the peaches straight from the freezer, layer everything into the ramekin in about two minutes, and slide it into the oven. The butter melts into the peaches as it bakes and creates the most gorgeous caramelized jammy filling that pools around the cookie dough topping and makes the whole thing look absolutely beautiful coming out of the oven.

Serve it immediately with a generous scoop of vanilla ice cream melting into that warm bubbling filling and the golden cookie topping. This is the dessert for summer evenings, date nights at home, or any night when you want something warm and special without any real effort. Five ingredients, one ramekin, twelve minutes, and the most satisfying single serve summer dessert you will make all season.
