I'M SO GLAD YOU'RE HERE!

#DOSTUFF

Pizza night just got a serious upgrade and these garlic butter pizza rolls are the reason. Store bought pizza dough split into twelve equal sections, pressed flat, stuffed with pizza sauce, a chunk of string cheese, and mini pepperonis, pinched closed, nestled into a greased muffin tin, and brushed with the most incredible garlic herb butter before baking at 400 for fifteen minutes. Individual stuffed pizza rolls that come out of the oven golden and puffy with melted cheese pulling from the center when you tear them open. The kind of thing that makes everyone in the room migrate toward the kitchen the second they smell them.

The string cheese is the stuffing detail that makes these so genius and so easy. One stick of string cheese cut into three equal sections gives you the perfect amount of melty cheese for three rolls without any measuring or shredding required. It melts beautifully in the center and creates that irresistible cheese pull that makes these look like something from a pizza place that has been perfecting stuffed rolls for decades. Add the mini pepperonis right on top of the cheese before you pinch everything closed so they get tucked inside every roll and cook right alongside the sauce and cheese as everything melts together.

The pinching technique is the step worth taking your time on. Press each dough section into a flat round, add your fillings in the center, and then pull the edges up and over everything and pinch firmly at the top so nothing leaks out during baking. If the seal feels loose, give it another pinch and place it seam side down in the muffin tin for extra insurance. The muffin tin is what gives each roll its perfectly round shape as it bakes and keeps everything contained and upright so the garlic butter you brush on top stays right where it belongs.

That garlic herb butter brush right before the oven is the finishing touch that makes these taste like something you would pay way too much for at a restaurant. Melted butter, garlic, Italian seasoning, and a pinch of salt brushed generously over every roll so they bake up golden and fragrant and herby all the way around. Serve them straight from the muffin tin with a bowl of warm marinara on the side and watch them disappear before you have even set the table. These work for pizza night, game day, a quick weeknight dinner, or any time you want something that feels special and comes together in twenty five minutes.

Why You’ll Love This Recipe:

  • Store bought pizza dough means zero dough making and the whole recipe is on the table in under thirty minutes with minimal cleanup
  • Individual portions mean everyone gets their own perfectly golden puffy roll with a gooey melted cheese center and no sharing required
  • The muffin tin does all the shaping work so every roll comes out perfectly round and golden without any special equipment or skill
  • Completely customizable with any pizza toppings you love so these work for picky eaters and adventurous ones equally

Key Ingredients:

  • Store bought pizza dough: The shortcut that makes this recipe genuinely weeknight friendly. Refrigerated pizza dough from the store works perfectly and gives you the right texture and flavor without any dough making
  • String cheese: Cut into thirds and used as the cheese filling for each roll. It melts into a perfectly gooey center and gives you that incredible cheese pull without any measuring or shredding
  • Mini pepperonis: Small enough to tuck neatly inside the dough without poking through and they distribute the flavor evenly throughout every single roll
  • Pizza sauce: A small dollop in each roll is all you need. Too much sauce will make the dough soggy so keep it to about a teaspoon per roll
  • Garlic herb butter: The finishing touch that goes on right before the oven and makes the difference between a good pizza roll and an absolutely incredible one. Butter, garlic, Italian seasoning, and salt is all it takes

Tips for Success:

  • Pinch the dough seal firmly and place each roll seam side down in the muffin tin so it stays closed and nothing leaks out during baking
  • Do not overfill. A teaspoon of sauce, one section of string cheese, and a small pinch of mini pepperonis is the right amount. Too much filling makes the dough impossible to seal
  • Brush the garlic butter generously right before they go in the oven, not after, so it bakes into the dough and makes the outside golden and herby rather than just sitting on top
  • Let them cool for two to three minutes before pulling them from the muffin tin so the cheese has a moment to set slightly and the rolls hold their shape

Storage:

Store leftover garlic butter pizza rolls in an airtight container in the refrigerator for up to three days. Reheat in the air fryer at 350 degrees for three to four minutes to bring back that golden crispy exterior, or in the microwave for thirty seconds if you just want them warm quickly. The air fryer reheat is strongly recommended for the best texture.

FAQ:

Can I use homemade pizza dough instead of store bought?
Absolutely. Any pizza dough recipe you love works here. Just make sure it has had time to rise fully before you divide and fill it so the rolls have enough structure to hold their shape in the muffin tin.

Can I customize the fillings?
Yes and this is one of the best things about this recipe. Swap the pepperoni for cooked Italian sausage, mushrooms, olives, or diced bell pepper. Use mozzarella chunks instead of string cheese for a different melt. Add a little fresh basil inside before pinching closed. Any pizza topping combination you love works beautifully here.

Can I make these ahead of time?
You can assemble the rolls and keep them covered in the muffin tin in the refrigerator for up to a few hours before baking. Brush with garlic butter right before they go in the oven rather than ahead of time so it does not absorb into the raw dough and lose its flavor. Bake as directed straight from the fridge adding two to three extra minutes to account for the cold dough.
